Cereal bars with oats, almonds and coconut
They are crackling, golden bars, just the way my family likes them, you can also change the recipe to taste, adding other dried fruits, with a touch of cinnamon or ginger.
Ingredients
- Oat flakes 300 grams.
- Grated coconut 50 grams.
- Pastry flour or oatmeal 50 grams.
- 1 pinch of salt.
- Vanilla essence 5 milliliters.
- Honey 175 grams.
- Unsalted butter 140 grams.
- Sliced or diced almonds 50 grams
- Sultana raisins or dried cranberries 50 grams.
- Flax seeds (optional) 20 grams.

Start by melting the butter with the honey to let it cool, prepare the oven at 170 °C, then in a large container mix the oat flakes with the coconut, the flour, the almonds, the raisins and the salt; make a hole in the center and add the melted butter with the honey and vanilla; mix everything well until you have a uniform, pasty and sticky mixture.
Pour into a square or rectangular mold and flatten the mixture well, pressing with a paddle to compact the dough. Then it is placed in the oven for 40 minutes, until it is golden to taste.
Do not remove from the mold until it is settled and cold, cut into bars with a sharp knife, then store in containers with lids until the dough is compacted.
