The origin of this typical dish is Antaquera, in Andalusia, Spain. This recipe is similar to the Cordovan salmorejo, which is of Roman origin, just like the porra is made with tomatoes, pepper, vinegar, garlic, oil, its name comes from the well-known mallet that was used to mash food in a firm space.
